This is a plant-based twist on a traditional Filipino dish: the notorious pork blood stew ,"Dinuguan." Don't let the look of it fool you because this dish is so unique and flavorful, you can't just have one bowl.

This plant-based dinuguan is made of protein-packed black beans, tofu, soy curls, and mushrooms. The bold and complex flavor comes from the caramelized onions, garlic, black beans, red wine, and bay leaves expertly layered to give you that slightly tangy, savory, and velvety smooth mouthfeel.

This dish is traditionally paired with white rice or "puto," a Filipino steamed rice cake. I highly recommend trying this with puto, the contrast of the sweetness of the rice cake with the stew and how it perfectly absorbs the rich broth is Heaven on Earth.
